No-Bake Peanut Butter, Oatmeal, and Chocolate Chip Energy Balls
- 1 1/2 cups oats
- 1/3 cup honey
- 1/2 cup peanut butter (sunflower or soy butter work too)
- 1/4 cup chocolate chips
- 1/2 teaspoon vanilla
- Add all ingredients to a medium bowl and mix well until well combined.
- Roll mixture into 1- to 2-inch-sized balls and place on a plate or baking sheet.
- Refrigerate for 20 minutes to firm them up.
- Watch them disappear!
They will store well, sealed, in the refrigerator — if you have any leftovers.
