Breakfast and Dinner Can Be a Breeze

My son plays baseball from 5-9pm on Tuesday nights, which means Tuesday nights and Wednesday mornings are challenging for our family. We need a quick turnaround from the bus stop to make it to the first practice on time, and after a late night, Wednesday mornings come quickly. I'm thrilled to share our experience with Coleman Natural Bacon and my best dinner and breakfast plans for busy weeknights and early mornings.

On Tuesday after school, I cooked two packages of bacon – one for dinner that night and one to freeze in breakfast sandwiches for the rest of the week. The first pack of Coleman Natural Bacon went into yummy BLT sandwiches that we could eat at home or in the car, depending on time. I threw in a few bags of raw veggies for sides and we were ready to go. (Or more accurately, ready to scramble to the car after a frantic search for baseball cleats.) 




The second pack of Coleman Natural Bacon was cooked in the oven and transformed into pre-made breakfast for the whole family for the rest of the week. Quick and tasty breakfasts help to make those early Wednesday mornings feel a little less painful, and they are so great before an early morning travel game, come Saturday morning.




While your Coleman Natural Bacon cooks in the oven, scramble a dozen eggs with a little milk in a bowl. Pour the eggs into a baking sheet (yes, baking sheet!) and bake in the oven at 350 degrees for about 15 minutes. Slice the eggs into squares and add them to pre-cut English muffins with a slice of cheese and piece of bacon. Wrap and freeze. To eat, defrost them in the microwave for 1 minute, then cook for 30 seconds on each side. They are so quick and tasty and often prevent my family from stopping to buy fast-food breakfast when we are on the road.
