Tortellini Sausage Soup in the Slow Cooker

A Delicious and Easy Weeknight Recipe!

This is one of the greatest recipes for the slow cooker. It is so tasty and easy to make. And it’s always been a crowd pleaser – even for my 6 and 3-year-olds!  I made a few alterations to the original recipe by adding some fresh veggies from my garden.

Ingredients: 
  • 1 lb. mild Italian sausage
  • 1 bag frozen green beans
  • 1 cup fresh zucchini, chopped (optional)
  • 1 cup fresh diced tomatoes or 1 can petite diced tomatoes
  • 3 carrots, sliced (optional)
  • 1 medium onion, diced
  • 1 Tbsp. Italian seasoning
  • 1 32 oz. box chicken stock
  • 1 9 oz. container refrigerator cheese tortellini
  • Fresh, shredded Parmesan cheese
Instructions:
  1. Crumble the raw sausage in slow cooker (if using sausage with casing just removing casing and crumble).
  2. Add tomatoes, diced onions, frozen green beans, Italian seasoning and chopped zucchini and carrots (if using).
  3. Cook on high 3-4 hours (Mix occasionally until sausage is cooked).
  4. Add 1 box of chicken stock and cook on high for 1 hr.
  5. Add cheese tortellini and cook on low for an additional 1/2 hr.
  6. Serve topped with fresh shredded Parmesan cheese.
