No-Bake Peanut Butter, Oatmeal and Chocolate Chip Energy Balls

As a mom, I'm always on the hunt for healthy treats. My kids love to snack on treats, of course, but I prefer for them to have something a little healthier when possible. This treat covers that for me! Plus they are quick - I made a batch of 20 balls in about 10 minutes. I am looking forward to including these treats in the kids' lunch boxes this year.

What you need:

  • 1 1/2 cups oats
  • 1/3 cup honey
  • 1/2 cup peanut butter
  • 1/4 cup chocolate chips
  • 1/2 teaspoon vanilla

What you do:

  1. Add all ingredients to a medium bowl and mix until well-combined.
  2. Roll mixture into 1 to 2 inch sized balls and place on a plate or baking sheet.
  3. Refrigerate for 20 minutes to firm them up.
  4. Watch them disappear! 

Store these in a sealed container in the refrigerator -- if you have any left over.
