Watermelon Ice Pops

Watermelon is a summer staple in our house. My kids can devour an entire full watermelon in days! I was able to fend them off so I could make watermelon ice pops. They are so easy AND delicious. 

Ingredients

  • seedless watermelon (I used 1/4 of a whole one)
  • a little water
  • ice pop molds (or paper cups and craft sticks)
  • (Editor's Note: We mix in chocolate chips with our Ice Pops. Yum!)

Directions
  1. Cut the watermelon off the rind and place in a blender.
  2. Puree the watermelon adding a little water if you need to until no large chunks remain. Ours was very juicy so I did not add any water, only the juice from the cut watermelon. 
  3. Once the watermelon is pureed, pour into your ice pop molds and place in the freezer for about 2 hours. (If you do not have molds, pour into paper cups and place in the freezer. After about an hour, and once the puree begins to set, insert the stick and continue to freeze until fully set).
  4. Once fully frozen (if the kids can wait that long!), run a little warm water along the outside of the mold or cup to release the ice pop and enjoy.
 
This recipe will also work with cantaloupe, honeydew or any melon with high water content.
